Mexico: Part II

Andrew had fun taking the Hobie Cats out and we fortunately had some windy days that were perfect for sailing. 

And now, a little on the food at Secrets Silversands... It was AWESOME!! This was my favorite frozen fruity cocktail called a "Bahama Mama". There were 7 restaurants to choose from for dinner, and they were all amazing, ranging from Mexican, to Mediterranean, to Asian... (Crispy Salmon with Risotto and Rack of Lamb pictured below).

I think he's got a real career ahead of him as a style blogger...

Mexico: Part I

We're back! 

We had a beautiful and restful week in Mexico!

I will be sharing our photos gradually over the course of the week as I'm busily playing catch up with the shop. But to share a bit about the trip, we got into a rhythm with our days, beginning with breakfast (crepes with candied goat milk, mangoes, kiwi, and sauteed cactus with eggs were my favorite things) followed by yoga. My classes were well attended each day! Our afternoons were spent on the beach.. Andrew played beach volleyball, enjoyed quite a few naps, and I read a lot!

Last night Allison and I threw an impromptu surprise birthday fiesta for Taylor. His birthday is not until Tuesday but since Andrew and I will be leave for Mexico at 3am tonight, we will be missing it! 

So since Taylor loves Mexican food and the fiesta decor just happened to be 1/2 price at Party City, it seemed only appropriate that we bring a little bit of the Riviera Maya Cancun to our friends here in snowy PA. We fried up some quesadillas, made 3 layer bean dip, guacamole, and taquitos, turned up the Mariachi music and put our mustaches on. 

I may pop in to say hi from Cancun, but if not, Adios Amigos, see you in a week!!

Happy Birthday Taylor!

Andrew requested a chain saw, a goat, and cheese making supplies for Christmas this year, so obviously I went with the cheese making tools and ignored the other two requests..

 

He started out with a gallon of raw milk from a local farm. Taylor was his handy assistant who kept the milk from burning as they took shifts stirring it.

As the milk heated & slowly curdled, the curds were strained off the top and placed into a cheese cloth to drain.

Excess moisture was squeezed out and we were left with about a pound of cheese! It was salted and left in the mold overnight. The final product was similar to mozzarella, but firmer. It was fresh and so delicious! Maybe I'll consider getting him the goat next year so we have an endless supply of milk for cheese..

Yes, even though this song is about 3 years old, I only recently saw the music video and I pretty much love everything about it.. from her outfit, to her apartment, to her dancers...
