Since February has been such a cold, snowy month i have been doing a lot of baking. i think half the appeal is the fact that turning on my oven heats up almost my entire cottage..I also really love having semi healthy baked goods around to eat for breakfast with my coffee.
This is the second time i've made these scones, and not to toot my own horn, but let me tell you...i think they are the BEST scones i've ever had!! And guys, I never knew this, but...scones are super easy to make!! you HAVE to make them, they are sooo so simple...
The recipe came out of my Williams-Sonoma "Essentials of Baking" book. I chose to add dried cranberries, white chocolate chips & walnuts. I used 50/50 whole wheat & white flour mix....
Oat Scones
1 cup flour
3/4 cup old-fashioned rolled oats
1/3 cup oat bran
1/4 cup firmly packed brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons cold unsalted butter cut into pieces
2/3 cup half -and-half or whole milk
Pre-heat oven to 425 degrees. Line baking sheet with parchment paper or dust with flour ( I used flour).
Mix all dry ingrediants and cut in the butter until mixture forms into large, course course crumbs.
Pour half an half into dry ingrediants and mix with rubber spatula until moistened.
On floured surface form the dough into a 1/2-1" thick rectangular rounded log. Cut the round log into wedges.
Bake until golden brown 13-17 minutes (12-13 worked for me!)
Enjoy with tea or a latte!!
